There is something about cooking at home. I really find it therapeutic. The freedom to cook what I want when I want, with no real care if things do or do not turn out the way I’d liked, or to change direction half way through because that’s what I felt at the time. I’d imagine it’s like a musician picking up a guitar strumming away as one song bleeds into another. As I mature I genuinely feel life is about the journey and not so much the destination. The destination in this case might be a great meal. The journey however is often a trip to the market. The hour or so preparing the ingredients with my favourite music playing, sometimes with a glass of wine or two next to me on the bench immersing myself in whatever it is I’m doing.
There are advantages to embracing cooking at home. The money saved by not ordering take away. The satisfaction of making a tasty meal your self over the disappointment of spending a lot of money only to say “I could have done better myself”. Not to mention the health benefits of eating fresh unprocessed food. When you make everything yourself, particularly from scratch, you have complete control over the freshness and quality of what you eat. With a little advanced meal planning and a shopping list you can create quality meals very quickly.
These days I am at home a lot more so I thought I’d start a food blog. What should I blog about ? After working as a chef all over the world for the last 30 plus years I didn’t know where to start. I decided why not document whatever it is I’m cooking at home complete with recipes and video. This may inspire family and friends who sometimes ask me ” Do you cook much at home?……. Can you suggest something I have friends coming over?……. or how do you cook (insert dish here)? …….”
Many of my blog recipes are dishes I have cooked in the field. Many of these recipes I have adjusted for home and for family cooking. For example I may add extra vegetables to a dish. This blog will post regular recipes and methods to take the every meals to the next level. Conversely, I may take a restaurant recipe and dial down a version you can make yourself at home. So, if it is a keto diet I am experimenting with, if it is a Saturday night dinner with friends, a Sunday lunch with family, weekend BBQ or baking a cake I want to share this with you.
