Cocoa Keto Balls

I found when I started my keto diet I needed a snack now and then. I did try not to snack during the day, if I did I would grab a slice or two of roast meat or a cold cooked chicken drumstick.

After dinner with a cup of herbal tea is when I really crave something sweet. These cocoa keto balls are almost savoury and I love that nutty crunch. After a month my cravings have subsided but it is still nice to have the occasional treat. Cocoa keto balls freeze well so make a batch and portion in zip lock sandwich bags. If you MUST have a little sweetness add a keto friendly sweetener like Stevia. Each time you make future batches keep reducing the amount of Stevia until phased out.

Ingredients

  • 250g Almonds raw natural

  • 100g Pumpkin Seeds

  • 150g Almond Meal

  • 50g Cocoa

  • 2 tsp Vanilla

  • 60g Coconut Oil melted

  • 130g Almond Butter

  • Salt pinch

Directions

  • Preheat oven 180c and roast almonds, pumpkin seeds and coconut until crisp and lightly browned. Then use a blender to chop or use a knife to chop by hand.
  • Add all ingredients into a bowl. Use a wooden spoon or a spatula to mix until well combined. Allow to stand for 30 mins. This will help all the dry ingredients soak up the wet. After 30 mins squeeze the mix with your fingers. If the mix does not hold together and is crumbly add a little extra water or coconut oil. Just add a little at a time (10grams) for example. This will avoid the mix becoming too wet.
  • Roll into balls. Any size you like. Big enough for two bites aprox 15 grams. Place onto a tray and leave in the fridge until firm. Transfer into an airtight container and keep in the fridge. They will freeze well too if you want to make up a big batch and freeze.

Notes

  • Salt is optional. If added do so to taste.
  • Keto friendly low carb sweetener may be added eg Stevia or Erythritol (2tablespoons)
  • Use any keto friendly nuts or seeds you like
  • You can simply add all ingredients into a bowl and mix without roasting the nuts and coconut if you are pressed for time or if you desire a less crunchy texture
