NUT SLICE

Warning. One slice is not enough ! This nut slice really is quick and easy. Put all ingredients into a blender, put all ingredients into a lined baking tray and bake. That’s it. Keeps in an airtight container. Have as snack with a cup of tea or take a slice with you when you are on the road.

Ingredients

  • 100g Coconut shredded
    100g Pumpkin seeds
    200g Almonds raw natural
    100 g Pistachio
    100g Cranberries dried

  • 100 mls Canadian maple syrup 100% pure

Directions

  • Place all ingredients into a bowl style food processor and pulse until there is a good mix of fine, medium course and course nuts. Squeeze some mix in your hand it should clump together
  • Line a baking tray. Pour in the mix and using something flat press down onto the mix. Compress it tightly making sure the mix reaches into all the corners.
  • Place tray into a preheated oven an bake at 160c for 30 mins
  • Allow to cool on a cake rack completely before cutting into small squares or bars with a sharp knife
  • Keep min an airtight container at room temperature for up to 1 week

Notes

  • It’s really important to let it cool completely before cutting
  • Do not keep in the fridge as it will go soft.
  • You can use any nuts or seeds. This is what I had in my cupboard at the time
  • Drizzle with or dip in chocolate if you like
  • Or instead of cutting into squares or bars. Break it up with a wooden spoon into small pieces to make a paleo granola
