Party Sausage Rolls

Nothing better than a good sausage roll. Nothing worse than a bad one. Usually the good ones are homemade. This is another recipe I’ve picked up along the way. When you cook these it will become obvious that this recipe came from someones Aunty or Nanna. They are so moorish. So why buy the processed ones from the store. Make up a batch, cook what you need and freeze the rest. You will always have a comforting snack on hand when friends drop in for a drink or to watch the footy. Kids go crazy for these too.

Ingredients

  • The Filling
  • 1 x large grated Carrot

  • 2 x large grated Potatoes

  • 1 x large grated Onion

  • 2 x clove Garlic

  • 250g Tomato Relish

  • 50g Panko Crumbs

  • Salt & Pepper

  • 500g lean Pork mince

  • 500g lean Beef mince

  • 2 x 55g Eggs

  • The Egg wash
  • 1 x Egg yolk

  • 10mls milk or cream

  • The Pastry
  • Sesame Seeds

  • Good quality Puff Pastry

Directions

  • Place all “filling” ingredients into a bowl. Mix throughly. Best to wear food handling gloves and use your hands to mix really well. Important !! Squeeze as mush water out of the grated potato and grated onion as possible before adding to the bowl !!
  • Cut 1 square sheet of puff pastry in half. Use a piping bag to pipe or wear food handling gloves and use hands to roll the mix, forming a sausage like log of filling along one edge of the pastry. Roll the pastry over the log. Brush the opposite edge of pastry with water (this will act like a glue sticking the pastry together), continue to roll the pastry until the two edges overlap creating a seal. Leave seal side down until needed. You should now have a perfectly formed cylindrical log of uncooked sausage roll.
  • Place the uncooked cylindrical log of sausage roll in the fridge. Let it rest in the fridge for 1 hour. Allowing the meat to firm up a little. This will be helpful for the next step.
  • Preheat oven 190c. Remove from fridge and cut the uncooked sausage roll into desired length. Line a baking tray and place the cut sausage rolls onto the tray. Leaving space between each one so they brown all over evenly. Mix 1 egg yolk and the milk or cream to make an egg wash. Brush each sausage roll with a little egg wash. Sprinkle a few sesame seeds over each sausage roll. Bake in oven for 25 mins or until cooked.
    It is a good idea to rotate the baking tray 180 degrees after 12 mins then continue cooking. This will help all the sausage rolls to brown evenly all over.

Notes

  • Very important step !! Squeeze as much water out of the grated potato and grated onion as possible
  • This recipe will cater for a large gathering or party. Or at the end of Step 2. Wrap them individually in cling film and freeze them. Take from freezer and bake as needed.
  • I use Panko breadcrumbs. Any breadcrumbs may be used just don’t add too many. If you don’t have scales to measure add 2 handfuls.
