Surprise yourself, see what you can create if you take all the fresh food and condiments out of the fridge and place it on the kitchen bench. This post is a real example of just that. If you look at my previous two posts I have combined the leftovers to make an amazing meal in minutes.
ENCORE EATS Chicken Salad

100g Roast Chicken (cold)
80g Roast Cabbage and Mushroom (leftover from roast chicken post)
1 TSP Salsa Verde
Half baby Cucumber
80g Homemade Coleslaw
Half baby Cos Lettuce
50g Pickled Onions (homemade)
Directions
- Shred roast chicken
- Dice baby cucumber place into a bowl and add the salsa verde mix together
- Arrange all ingredients into a “Buddha Bowl” style as seen in video or simply toss all together and serve into a bowl
- I thought the salsa verde was enough. Add lemon juice or dressing to taste if necessary.
