ENCORE EATS Chicken Salad

Encore eats is my positive spin on leftovers. It’s a meal you don’t need delivered. So why Uber eats when you can Encore Eats. Surprise yourself, see what you can create if you take all the fresh food and condiments out of the fridge and place it on the kitchen bench. This post is a real example of just that. If you look at my previous two posts I have combined the leftovers to make an amazing meal in minutes.

Ingredients

  • 100g Roast Chicken (cold)

  • 80g Roast Cabbage and Mushroom (leftover from roast chicken post)

  • 1 TSP Salsa Verde

  • Half baby Cucumber

  • 80g Homemade Coleslaw

  • Half baby Cos Lettuce

  • 50g Pickled Onions (homemade)

Directions

  • Shred roast chicken
  • Dice baby cucumber place into a bowl and add the salsa verde mix together
  • Arrange all ingredients into a “Buddha Bowl” style as seen in video or simply toss all together and serve into a bowl
  • I thought the salsa verde was enough. Add lemon juice or dressing to taste if necessary.

  • No rules here. Go with whatever you have. This is a legitimate example of putting together what I had in the fridge. No need to go to the store. How much would this cost at a cafe ? You are actually saving money not spending money every time you Encore Eat.
