Whole roast chicken from the store is convenient and inexpensive. But when you cook it yourself you have complete control over the quality and freshness. In 60 minutes plus 20 minutes resting time you will have your own delicious roast chicken ready to go. If you are catering for big numbers roast four or six chickens at the one time. It’s great to keep left over roast chicken in the fridge, “encore eats” I like to call it for a for a high protein snack on its own, in a wrap or to throw into a quick meal like a salad or stir fry. When cooking Keto I eliminate the potato and serve with baby spinach or rocket lettuce.

1.4kg Whole Organic Chicken
Aromatics:
Chives
1 thumb Ginger
1 Celery stickPinch Salt and Pepper
2 medium Nicola potato
200g Button Mushroom
400g Cabbage
300g Broccoli
Directions
- Wash chicken under cold running water. Throughly dry with paper towel, inside and out.
- Put aromatics inside the cavity of the chicken. Close the cavity by using a bamboo skewer in a zig zag stitch (see video)
- Brush chicken with E.V. Olive Oil all over and season. Place chicken onto a lined baking tray. Preheat oven at 200c and place chicken in the oven for 20 minutes.
- Whilst chicken is in the oven thinly slice potatoes, mushroom and the cabbage. Drizzle with a little olive oil and toss. Take chicken out of oven after 20 mins. Place the sliced veg onto the tray under and around the chicken. Place back into oven for another 20 minutes.
- Whilst chicken is in oven cut broccoli into florets and toss in a little olive oil. When 20 minutes is up take tray out of oven and place the broccoli on top of the veg and put back into the oven for another 20 minutes.
- When 20 minutes is up remove the tray from the oven. By this time the chicken would have been in the oven collectively for 60 minutes. Allow to rest for 20 minutes before carving the chicken.
- When carving the chicken reserve the aromatics and the bones to make stock. Place them in the freezer if need be to be used at a later date

Notes
- You can use any aromatics inside the chicken. Lemon, garlic and rosemary or ginger, coriander root and lime. Use what you have no need to go to the store.
