I use keto veg but feel free to use what ever you have in the fridge. No need to make a special trip to the store. Toss all the veg in olive oil and roast in the oven. This is an example of using Romesco a fridge staple to help execute a quick keto meal with not to much fuss.
Pork Fillet

550g Pork fillet
100g Sweet potato
100g Cauliflower
100g Broccoli
100g White Zucchini
80 mls Extra virgin Olive oil
Pinch Salt and Pepper
1 TSP Romesco* sauce
Directions
- In a bowl add Cauliflower, Sweet potato, Broccoli, White zucchini and Asparagus spears. Drizzle in the olive oil and salt and pepper. On a lined baking tray add the sweet potato put in oven 10 mins. Then to the same tray add the rest of the veg and cook a further 15 mins or until cooked with nice colour.
- Take the pork fillet out of the fridge. Remove any silver sinew.
In a HOT pan season and sear Pork fillet. Turn heat down low put a lid in the pan and cook fillet for another 10 mins, turning every 3 minutes. Turn the heat off. If it feels a little under cooked continue to rest with the lid on for 5 minutes. If it feels ready remove from pan and rest on a plate for 5 minutes. Read the notes to work out if the pork is cooked - Slice the pork. Retain any juice.
- Smear Romesco on the plate. Spread out the roasted veg. Place sliced pork over the Romesco. Drizzle any juices over the top.

Notes
- Cooking times will vary depending on the size of the pork fillet. 550g is an average size fillet
- Pinch the pork fillet with your thumb and index (pointer) finger remember how soft or firm it feels. Now pinch your thumb and index finger of your left hand together and squeeze the muscle below your left thumb with your right hand using the thumb and index finger. If the pork fillet feels soft like this it is rare and not ready. It will need to be cooked a few minuted longer. Now with your left hand press your thumb and your ring finger together. With your thumb and index finger of your right hand squeeze the muscle below the left thumb again. If the pork fillet feels tight like this it should be cooked medium well.
- OR use a meat thermometer if the middle of the fillet reads 58c – 60c it is ready.
- If you don’t want to cook the pork fillet all the way in the pan. Once seared put onto a lined baking tray and roast for 15 mins turn it over half way. Check if cooked. Rest as instructed.
- DO NOT slice the pork straight away after the cooking as all the juice will run out and the pork will be very dry. Rest it for half as long as you cooked it as a minimum.
