I’ve got to be honest, I was surprised at how well this turned out. I tried it for lunch and it didn’t disappoint. Again having my fridge staple Pesto ready to go saves the day again. A super quick keto friendly meal in minutes

Keto Pesto Prawns

Ingredients

  • 150g Prawns raw and peeled

  • 1 TSP Basil Pesto* homemade

  • 150g Zucchini thinly sliced ribbons

  • 150g broccoli florets

  • Juice of half lime

  • 30 mls extra virgin olive oil

Directions

  • Peel and devein raw prawns
  • Bring a pot of water to the boil and put a pan on heat with a little olive oil
  • Thinly slice zucchini into ribbons and cut broccoli into florets and drop into boiling water for 30 seconds to blanch. While this is happening drop the prawns into the hot pan to sauté
  • Strain the veg removing as much excess water as possible add to the hot pan with the prawns and give it a toss. Add the lime juice and the pesto. Stir well of the heat making sure everything is coated in pesto add more pesto if need be and serve

Notes

  • You can spiral the zucchini into zoodles (zucchini noodles) if you have a spiralizer. I didn’t have one so i used a moadoline style slicer
  • * Basil Pesto homemade. See earlier blog post or on the “Recipe Index” on this website for recipe
  • When straining the vegetables its really important to not have any excess water. Even try to press down on the broccoli and zucchini to release as much water as possible. Otherwise the dish will be really watery
  • If you don’t want to juggle the hot pan and the hot water stage together. Do it in two stages 1. Blanch the veg as per instructions and refresh immediately in cold water remember to squeeze out all the water then reserving the veg until you are ready 2. add the blanched veg into the hot pan and sautéed prawns giving it some fire to reheat the veg – following the recipe thereafter
