This keto meal is an example of how you can have a magnificent lunch or dinner ready relatively quickly by using the fridge staples as seen in my previous posts and in the recipe index on this website. Make my condiments and try this dish.
Chicken Drumsticks

2 Chicken drumsticks
Fresh oregano and rosemary. 2 sprigs each
1 clove garlic
Lemon zest. One third of one lemon
Pinch of salt and pepper
Extra virgin olive oil
1 Cucumber small
4 Cherry tomatoes
1 TSP Homemade pesto
1 TSP Homemade avocado oil Mayo
80g Coleslaw
100g Rocket Lettuce
6 Tamari almonds
Directions
- Lollipop the drumsticks by removing the end and then cut through the main tendon. Then scrape the bone down towards the meaty end until the bone looks clean
- Put drumsticks into a bowl and add: Extra virgin olive oil, herbs, garlic, lemon zest, salt and pepper then marinate in the fridge for 1 hour
- Place drumsticks on a lined baking tray and roast for 40 mins at 200c
- Cucumber tomato and pesto salad time. Deseed the baby cucumbers and small dice, thickly slice the cherry tomatoes, add a tea spoon of home made pesto*and mix
- Smear a teaspoon on homemade avocado oil mayo* on the plate and place down the drumsticks, pesto salad, coleslaw*, rocket lettuce, tamari almonds and a lemon wedge

Notes
- You don’t have to lolliipop the drumsticks. You can roast as is. I do this because I believe it makes the drumstick more tender and it looks better.
- Use any fresh herbs you have if not use dried herbs
- I always line my baking trays when ever I roast or bake anything. I makes cleaning the tray so much easier.
